Chicken cooked cut into small pieces                                       1
Large cucumber, peeled and chopped                                       1
Shredded carrots                                                                       1 cup
Yellow pepper, chopped                                                           1 large
Chopped fresh cilantro or parsley                                             1/3 cup
Flour Tortillas                                                                             8
Large Lettuce leave                                                                    8
Thai-Choice Satay Sauce

1. Cut the chicken into bite sized pieces. Place the chicken, cucumber, carrots and bell peppers in a large bowl.
2. Add the Satay Sauce, stir in the cilantro and mix  well.
3. To assemble, place a large lettuce leaf on eachwarm tortilla and fill with the chicken mixture. Roll it up and enjoy.
