SPICY BAKED CHICKEN WITH LYCHEES


Dear Nick, This recipe is a new way to cook your chicken, the lychees match really well with the tender meat and contrast with the Sriracha Sauce.

Ingredients

  • Chicken whole 1 (1.8-2 kg)
  • Thai-Choice Lychees 1 can (565 g)
  • Thai-Choice Sriracha Chilli Garlic Sauce 200 ml
  • Green Capsicum 150 g
  • Ground Black Pepper 1 Tbsp
  • Salt 1/2 tsp 

Directions

  1. Stuff 1/2 can of lychees in chicken stomach and marinate in salt, ground black pepper and lychee syrup overnight.
  2. Pre-heat the oven at 250C, bake chicken for 45-50 minutes or until cooked.
  3. Heat Thai-Choice Sriracha Chilli Garlic Sauce and the remaining lychees, stir for 3-5 minutes. Add green capsicum and stir for another 2 minutes, pour sauce over baked chicken and serve immediately.
