Recipe for Stir-Fried Traditional Noodles with Chinese Mushrooms (Pad Mee)


Thai-Choice Traditional Noodles are the essential Long Life Noodles served during Chinese New Year.

Ingredients

Thai-Choice Traditional Noodles 200g 
Thai-Choice Dried Chinese Mushrooms 50g 
Thai-Choice Soy Sauce 2 Tbsp
Thai-Choice Oyster Sauce 2 Tbsp
Chicken Breast, sliced 300g 
Spring Onion, sliced 20g
Red Chilli, sliced thinly 1
Sugar 1 Tbsp
Vegetable Oil 3 Tbsp 

Directions

1. Rinse Mushrooms. Soak in warm water for 45 minutes. Drain, slice and set aside.
2. Rinse noodles well. Cook in boiling water for 5 minutes or until done. Immerse in cold water . Drain and set aside.
3. Heat oil in frying pan or wok. Add chicken and mushroom. Saute until done. Add noodles, sugar, soy sauce and oyster sauce, stir.
4. Add spring onion and chilli near the end. Mix well. Serve hot.
